Monday Weigh In - On Tuesday

Hello! This post is a little late because I was busy last night after work and then I got comfy snuggling with Mason. Yesterday was not a good day weigh in wise.
I gained 1.2 lbs. What is my problem? I did so well with Weight Watchers last year. I really need the online program to work for me because I do not have time anymore for the actual meetings. I have realized that I have to track EVERYTHING. No excuses.
Yesterday I started Couch to 5K - Treadmill Edition. I mentioned wanting to start it last week and I did :)
The first week you do the same thing all three days. Here is the plan for this week.
Today was my second day and I feel so great after I am done. I am actually doing it! I have been walking at 3.0 mph and running/jogging at 4.0 mph. The plan tells you to run slow when you start. I am also doing it at a 6.5% incline. I do not know why I threw the incline in, but I am so used to it now that it felt weird when I went down to 5% so I just kept it at 6.5%.  
I have to go now - lunch with a friend today :) I am going to ask her a very important question.


3 Months

Today Mason turned three months old. I cannot believe it has been three months since we welcomed him into our lives. This past week has been great. Mason has slept from roughly 9:00 at night until 5:30-6:00 in the morning. I worked until midnight every night this week, but getting that five hour block was really nice and then he would go back to sleep until 8:30-9. This is great for now, but I know that teething is right around the corner and it will mean some sleepless nights.
Mason is still on a combination of breast milk and formula. We have been doing more formula lately because I have not been pumping as much. I am pumping three times a day now, sometimes four because I was getting tired of having to pump every three hours. I try to do it every six now and I get roughly 8-10 ounces a day of milk. I have a frozen stock. I plan on using some of that to mix with purees when it is time to make baby food. I also send the frozen stuff to daycare.
We are going to put together the jumperoo tomorrow. He has been doing great with tummy time and he is always kicking his legs. Why not give this a try? I am going to say that like with the bumbo seat it will be with us right there helping him for the first month or so until we get this head control thing down.
I love hat he is more interactive now. He talks and smiles and studies things like his hands. Watching him grow and learn is amazing. He seems to want to stick everything I give him in his mouth. He is drooling a lot now. Those are the reasons I think that teething is right around the corner...

I hope everyone is having a great weekend. Mason is actually spending the night at Bill & Judy's (the in-laws) tonight so I am off the bed to get some sleep. My first night away from him and I am doing fine. I trust them and know he is well cared for.



I cannot believe it is Thursday already. It has been a good week so far. I have worked every night, but last night I was home to have dinner with Tim before having to leave. That was nice that have that in the middle of the week. I am looking forward to the weekend and having Saturday & Sunday off.
I have done pretty good with my tracking this week, I need to be more diligent. The walking is going great! I got a walk in on Monday, Wednesday, & today. Yesterday we went for a walk with Michelle and the pups.
Aww the love Mason. I love his face in the picture and the fact that he is actually looking at the camera.
Has anyone tried the C25K? I just printed off the Treadmill version and I think I am going to give it a go. I have never really been a running and I am skeptical of this program, but I think I will feel amazing if I can actually run. Even if I can only run a mile that would be such a change!
I remember gym class in High School and when we had to do track I never ran. I was always a walker. I was jealous of those that could run the whole time. I want to be that person! Yes at 25 I want to tell my high school self "One Day."
I plan on starting Monday. I am the type of person that has to start things on a Monday.

Monday Weigh In

Happy Monday! I had yesterday off so I am going through the Monday blues too. I have to go to work early today so it will be a ten hour shift, but no big deal.
On the way to Tim's parents house yesterday we took a back road it was a beautiful ride. I love back roads this time of year.

Nicole (our photographer friend) came over to take some family pictures. She has done our engagement, some wedding, maternity, newborn, and now our fall family pictures. We did a few outside with Mason dressed for Fall and then we did some inside with Mason dressed for Christmas photos. I cannot wait to get them and start making our annual Christmas card. After the pictures we spent time with Tim's parents. Mason must have been tuckered after we had the photos done because he was out for most of the afternoon.
*Yes he is on his tummy, but this cradle is in the living room where we were sitting the whole time. He loves sleeping on his tummy.*
For dinner we went to see my mom and her boyfriend, Paul. It was a delicious dinner of Pork Loin & Rosemary Potatoes made by my mom. I have not had a meal from her in forever and it was delicious. She made Apple Crisp for desert and Tim enjoy it when we got home.

They are having a Halloween Party next weekend. We went to check out how they decorated the barn. Nutmeg got a little jealous when Grammy was holding Mason. Isn't that pumpkin hat the cutest?!
It is Monday, which means it is weigh in day.

It is a loss of .6 lbs. It is not much, but it is a loss. I was nervous because I had a rough couple days last week. Have you ever had one of those days where you just wanted to snack and eat? That was Saturday for me. At the end of the day I felt like crap. I knew I ate too much during the day and I hated the way I felt. I need to be more conscious and take out gum when I start feeling "snacky." I also had a bad tracking week. I need to track EVERYTHING!

Pumpkin Pumpkin Pumpkin

What a dreary Friday it is, it has been pouring all morning. I hope it does not ruin all my nice foliage for our family pictures on Sunday. I am anxious to try out some ideas I have for our Christmas cards this year and I want to get some family pictures of us now that Mason is more alert and able to interact.

I woke up this morning and was in a baking mood again. I have been wanting to try pumpkin recipes like crazy! I got out my recipe box that I got at my bridal shower. The people invited to the shower were asked to write a recipe for us to put in a recipe box. I have added a few of my own to the box as well.
I found two recipes I wanted to make. One was a Pumpkin Crumble Cake which I have made several times and it is delicious. It is a great dish for family gatherings and parties. It is easy to make and fairly quick from start to finish. The second recipe was one I had not seen before - Pumpkin Bread. it must be one that was given to us at the shower, but the person did not write there name on it - boo. I made a few adjustments to it, but I think it turned out amazing! It makes three loaves so I froze one, I am bringing one to work, and one will stay on the counter for breakfast and snacks.
Find both recipes below!
Pumpkin Bread:
3 cups Sugar
4 eggs, beaten
1 cup Applesauce
1 16 oz can Pumpkin (2 cups)
3 1/2 cups Flour
1 tsp. Baking Powder
2 tsp Baking Soda
2 tsp. salt
2 1/2 tsp Pumpkin Pie Spice
2/3 cup water
Preheat oven at 350 degrees
In a large bowl sift all dry ingredients (flour, baking powder and soda, salt, pumpkin pie spice), make a well in the middle. Combine sugar, oil, eggs, and pumpkin and add to the dry ingredients. Add water and mix well.
Pour into 3 loaf pans and bake for 1 hour
Points + = 3/slice  - 20 servings (5 pts+ if oil is used instead of applesauce)

Pumpkin Crumble Cake
1 box Yellow Cake Mix
1/2 cup butter, melted
1 egg

1 15 oz can Pumpkin Puree (2 cups)
1 14 oz can of sweetened condensed milk
1 tsp pumpkin pie spice
1 tsp cinnamon
2 tbs brown sugar
2 eggs beaten

1 cup cake mix
3 tbs butter (softened)
1 cup chopped pecans or walnuts

Powdered Sugar (for dusting)
Preheat oven @ 350 degrees

Remove 1 cup of cake mix and set aside in a small bowl

In a large bowl combine remaining cake mix with 1 egg and 1/2 cup melted butter - mix well and pat into bottom of 13x9 pan - set aside
In same bowl used for the base, mix pumpkin, eggs, milk, spices, and brown sugar. Combine well and pour over base mix.
With a fork (or pastry cutter) combine your reserved cake mix with nuts and softened butter. Crumble over pumpkin mix.
Bake in preheated oven for 40-50 minutes until golden brown - let cool for 20-30 minutes
Cut in squares & sprinkle with sugar
Points + = 4 pts + / square - 24 servings

My First Time...

My first time in Trader Joe's! Well really the first time I bought something at Trader Joe's. Tim and I went to the new TJs on Wolf Rd in Albany last month and it was PACKED. I mean shoulder to shoulder filled with people. The store just opened in the area recently so I can understand why it was packed. People are interested and want to shop there.
I tried going again with Tim's aunt after we saw Mary Poppins. It was nice and calm and there was room to move. A much better experience. I picked up a few things that looked delicious.

I got the cookie butter and cat cookies because I see them all the time on Courtney's blog and had to give them a try. I had Tim try the cookie butter with me without reading the description and he said "It is like Christmas in a can." That is a great description! I love him lol. The cat cookies are delicious - they are like Teddy Grahams. I even tweeted about them:

I grabbed these because they looked yummy. Not only did they look yummy, they tasted yummy too. I was glad I grabbed them.
Yesterday was a good day. I got another walk in for the third day in a row. It feels great to get my treadmill time in again. Mason and I had lunch with a friend of mine that I have not seen in a couple years! Lindsey got to meet Mason and spend some time with him.
After Lindsey went home it was apparently nap time for the kiddos. You cannot see Nutmeg, but she was fast asleep on my bed when I took this picture.
Today I think we are going to meet Judy for a walk this afternoon and enjoy this nice weather while we can.


Pumpkin Experiment

I am feeling great! Two days in a row now I have gotten a great walk in. Today I did 45 minutes at 3.4 mph and a 7.5% incline. I even tried a little running in the beginning. I have heard that if you do it a little at a time you can build up to longer periods of running. I have never been a runner so I figured why not try it? I may be able to get more distance in with the limited time I have some days.
Today is a cuddle day with Mason. I have to work at 4, but I am going to enjoy the couple hours I have with  him.

Yesterday I felt like baking and I knew I wanted to make something with pumpkin. I decided on pumpkin cupcakes with pumpkin butter cream frosting.
I did not want to look up a recipe, I wanted to do something simple. I got a box of white cake mix and started to experiment.

I love my stand mixer, I think every baker should have one. It is fun to use! I like trying new things, but I have not quite mastered changing recipes so I get a little nervous.


1 box White Cake mix
1 1/8 cup water
A little less than 1/3 cup Oil
3 Eggs
2 Heaping Tablespoons of Pumpkin Puree
1 Teaspoon Pumpkin Pie Spice

Mix all ingredients, pour into cupcake liners - Bake @ 350 degrees for 18-20 minutes.
(I had my finger crossed hoping that they were going to bake right with the changes I made in the recipe)

Butter Cream:
1 stick Butter
1/2 cup Crisco
1 teaspoon Vanilla
1 1/2 teaspoon Pumpkin Pie Spice
2 Tablespoons Pumpkin Puree
4 cups Confectioner's Sugar

Cream the Crisco & Butter, add vanilla pumpkin pie spice and pumpkin. Add the sugar 1 cup at a time. You may add a tablespoon or two of milk if needed to make the frosting thinner.

Decorate cupcakes anyway you want. I used a frosting bag with a bigger tip for cupcakes from Wilton - Tip 1M.

I added some fall sprinkles and put the cupcakes in my carrier. The verdict? The guys at worked loved them and I must say that they were pretty yummy. The pumpkin taste was just enough.

Monday Weigh In

It is noon and I have already had a very productive day. I was up with Mason at 7:30 and decided to stay up after he went back down for a nap. I have already walked for 50 minutes 2.7 miles at a 7.5% incline and 3 pound weights. Mason woke up in the middle so I just put him in his Rock N Play next to me and he was fine.
I am on my second load of laundry. I did not plan on doing laundry today, but I had an urge to change our bedding. I love crawling into bed when there are fresh sheets on it.
I also stepped on the scale this morning before walking.
That is great! I lost again this week and I am in "one"derland again! I lost 1.8 lbs this last week. I was so happy when the scale stopped in the 100's. I am doing well with tracking and I am trying to get a walk in when I can. It will get easier as Mason gets older I am sure, but right now I just need to make time for me.
On Saturday we took our first family outing. t was our first time going a long distance with Mason and it was definitely a new experience. We had to stop a few times to feed him or change him, but it was not too difficult to do in the truck.
We drove to Massachusetts and then came back up through Albany. It was nice to see some foliage, but I think that it is not as good this year as it has been in the past. It is all this weird weather we are having.
We stopped at Goold's Orchard in Castleton on Hudson, NY. We needed to get apples before the season was over. We have heard their commercial on the radio, but never been there. It was not hard to find and the parking was good.

We went into the farm store and bought some apples and cider donuts. The donuts were delicious! I am going to make an apple pie and an apple cake. 

It is going to take us a while to get used to bring Mason places, but it is not impossible. I just have to remember to bring extra clothes for Tim & I too.

Happy Friday! When I typed the title all I could think about was the TV line up on Fridays when I was a teenager. I miss those days sometimes... Boy Meets World, Step by Step, etc. Anyone else remember TGIF?
I cannot believe it is Friday already! We are going on a day trip tomorrow. Tim and I usually do a day trip to New Hampshire or Massachusetts in the fall. It is such a pretty ride and we get to go to places we have not been before. Our plan is to go to Lee, Massachusetts, but I think I might see if Tim wants to go to the Woodbury Commons Outlets near West Point, NY. I want to see the Catskills. I have never been south of Albany so I think it would be nice.
The last few days have been pretty busy. I did not think I would get a chance to post today, but from the photo above you can see that Mason is sleeping nicely today. I have already made some goodies today :) Pumpkin Donut Holes. They are yummy.
I cannot believe it is October 12th and this is the first time I have made something with pumpkin in it. Well I hope Tim likes pumpkin because I have the rest of that can to use and a few more cans in the pantry.

Mason has been great this week. I am so in love with that little guy and I am extremely grateful when he has a good day or week.
He looked cute on Tuesday :) We also tried something new that day. He has been doing great with tummy time.
I decided to try the bumbo seat. I know it is too early to put him in it all the time and he does not have full head control yet, but he seemed to like it for the minute he was in it.
He also had some bonding time with Nutmeg.
I have been doing well this week sticking to the plan and my points. I wish I could fit in more walks, but I am trying my best. We went for a good walk yesterday with Tim's mom. It was a little chilly, but it felt good to walk outside and get some fresh air.
I am hoping for a great number on the scale on Monday.
