I took some photos this morning too. It you look closely you can see the birds in the trees. There were a whole slew of them flying around before I went to work.
Yesterday I mentioned the delicious cookies I made. Well here is my version of the recipe. You can find the original link here I wanted to simplify it a little with chocolate chips instead of chunks and I had just bought some walnuts (cost an arm and a leg I might add) so I used those as well.

My Version of Diet Pepsi Chocolate Chip Cookies J
- 1 ¾ cup flour
- ¾ teaspoon baking soda
- ½ cup butter at room temperature
- ½ cup packed brown sugar
- ½ sugar
- 1 egg
- 1 tablespoon Diet Pepsi at room temperature
- 1 teaspoon vanilla extract
- ¾ cup Chocolate chips
- ½ chopped walnuts
Preheat oven to 350 degrees.
Blended Flour and baking soda – set aside. Beat butter until smooth – roughly 2-3 minutes. Add the sugars and beat until creamy. Add egg, Diet Pepsi, & vanilla and beat for roughly 2 minutes until blended. Add flour mixture gradually and beat on low until combined.
Use a small ice cream scoop or a spoon and knife to make medium size round mounds on the baking sheet. Place them 2 inches apart.
Bake for 12 minutes, let cool then transfer to a cooling rack.
